By the 18th century we found already what we know as caramel today in places like Spain, Italy, France and England. Caramel came to the US as many other things, brought by immigrants and was cherished and enjoyed as an artisan product and later at industrial scale. Regretfully most caramel today in the US is produced on an industrial scale.
